TITLE: Malty and salty / モルティ―でソルティー
［香り］チリ、ジンジャー、ライスワインのビネグレットを準備し、セーヴル・エ・メーヌ地方の冷やしたシュール・リーのミュスカデをグラスに注ぎ、新鮮な牡蛎の殻を開ける。フレッシュな酸味とさわやかな塩味のある柑橘系の果物、モルト、塩味、ピートの軽いタッチで賑やか。
［味わい］加水すると、岩塩、ターメリックに加え、驚くべきシナモン アップル フラップジャックとファイブフルーツパイ、さらっとしている蜂蜜と砂糖漬けのアンジェリカの甘いフレーバーが口の中で広がる。ヴァン・ド・ノア、甘味の濃いクルミワインとバニラビーンズ香赤ワインに漬け込んだ緑クルミ。
We prepared a chilli, ginger and rice wine vinaigrette before we shucked fresh oysters and poured ourselves a glass of chilled Muscadet from the Sèvre-et-Maine region, labelled ‘sur lie’. Buzzing with fresh acidity as well as refreshing saline citrus fruits, malty and salty with light touches of peat smoke. Water added rock salt and turmeric but also surprisingly cinnamon apple flapjacks and five-fruit pies which were also coming through on the palate with sweeter flavours of runny honey and candied angelica, while in the finish vin de noix, sweet dark walnut wine, macerating green walnuts in red wine enhanced by vanilla beans.
