TITLE: A slap in the face with a welly boot / 長靴で顔を平手打ち
［ノーズ］「薪の火、灰、残り火」、「防水服を身に着けたカキの殻むき」、「ビーチのそばに電柱を立てて、筋肉痛の薬を塗る」、「海のそばの栗の売り手」など香りをとるのに夢中になる香り。これらはすべて、タール、クレオソート、塩海の空気、灰、防腐剤、皮革、ゴムの香りから触発される。
［パレット］生き生きとしていて、ピリッと塩辛く、ハーブ感がある。ピメントオリーブ、フライパンで焼いたベーコン、塩味のプレッツェル、アーブローススモーキー。加水すると甘味が出てきて、ウォールナッツホイップチョコ、リコリスのお菓子、シャルドネに浸した豚肉、焦げたポテトの皮、石炭の煙とタール。長靴で顔を平手打ち！
The panel went crazy describing the nose – ‘wood fire, ash and embers’, ‘shucking oysters wearing waterproof waders’, ‘putting up telephone poles by the beach, with a muscle rub after’ and ‘chestnut vendor by the sea’; all this inspired by aromas of tar, creosote, salt sea air, ash, antiseptic, leather and rubber. The palate was lively, zesty, salty and herbal – pimento olives, skillet-sizzled bacon, salted pretzels and Arbroath smokies. This turned sweeter with water – we now got walnut whips, liquorice allsorts, pork scratchings dipped in chardonnay, burnt potato skins, coal smoke and tar. ‘A slap in the face with a welly boot!’
