タイトル： A sweet-toothed sea dog / 甘いもの好きの船乗り
［香り］午後の波止場で革のポーチからレモントローチを出し、日当たりの良いテラスに座って樽熟成のブラウンエール、パイナップルのスライスと甘味のあるホタテのプレートを楽しんでいるところがイメージに浮かぶ。
［味わい］一度味わうと、アイシングシュガーをのせたとフルーツのトローチが現れる。その後、桃、ヘザーダークミードを海苔で包んだ上にすりおろしたココナッツマリネが続く。ほんの一滴加水すると、ハリエニシダでいっぱいの海辺の夏のそよ風のように変わる。続いて乾燥させて細かく砕いたミントとイラクサ、シーソルトをふりかけたキャラメルとパイナップルショートブレッド。フィニッシュには、リンゴ、サンファイア、メロンボール、ピンクグレープフルーツにアールグレイのフロートしヘザーとラベンダーの花飾ったカクテル。夏にぴったり！
The nose opened like an afternoon on the harbour, picking a lemon lozenge from a leather pouch, then sitting on a sunny terrace, reeled in by the scents of barrel aged brown ale and a plate of savoury-sweet scallops with a slice of pineapple.
Once tasted, chalky biscuit gems and fruit pastilles tease the palate. Peaches then follow, marinated in a heathery dark mead with a few strips of nori sheets and a pinch of grated coconut on top.
With a good drop of water, we basked in a seaside summer breeze laden with gorse, dried and crushed wild mint and nettles, then caramel on sea salt and pineapple shortbread.
To finish on a sweet note, we sipped a coastal cocktail of waxed apples, samphire, melon balls, pink grapefruit, with a float of earl grey and a pinch of assorted heather and lavender flowers. A summer treat!
