タイトル: Not easy – but it’s worth it! / 容易ではないが価値がある

[パレット]カリビアンブラックケーキ、蜂蜜を添えたラム酒漬けのフルーツケーキ、黒糖、ブラウニングソース。加水すると磨かれたマホガニー材、甘い没薬、インドのライムピクルスとダークハニーのバニラコーンブレッドと共に塩っぽいリコリスが続いていく。20年間ex-bourbon hogsheadで熟成したのち、HTMCが施された2nd fill hogasheadで後熟。

We all had to put on ‘our thinking cap’ as this was constantly changing in the glass. We were foraging for berries in bushes, drank a cranberry orange prosecco cocktail and distilled sandalwood oil. On the palate neat it was just like a Caribbean black cake, a boozy rum-soaked fruit cake with a good dose of molasses, brown sugar and browning (burnt sugar) sauce. With water polished mahogany, sweet myrrh incense and salty liquorice were followed by zesty Indian lime pickle and extra dark honey vanilla cornbread. After twenty years in an ex-bourbon hogshead we transferred this whisky into a 2nd fill hogshead with a heavy toast and a medium char.
