TITLE: Sensory adventure / 官能的冒険

蒸気機関で動くローラーでサトウキビを粉砕しているビクトリア朝の製糖工場に足を踏み入れるところがイメージに浮かぶ。ピストン、圧力計、歯車、レバー、ベルトドライブからの騒音、蒸気、砂糖、油の香りが、この感覚的な冒険を盛り上げる。紙やすりについたサトウキビの汁をなめるような味、ペトロリックの咳止め菓子、黒コショウ、タラゴン。 ワクワクするよね? 加水すると、香りはマンゴー、パパイヤ、キウイ、ほおずきなどのエキゾチックなフルーツに変化する。一方で口に含むと、チポトレの唐辛子とトマトピューレで作ったスモーキーでピリッとしたペースト、「チポトレのアドボ」のような辛さを感じる。

We imagined stepping into a Victorian sugar mill where the sugar cane was being crushed by rollers powered by steam engines. The noise coming from the pistons, pressure gauges, cogs, levers and belt drives, as well as the intoxicating scent of steam, sugar and oil, made this a sensory adventure. So did the taste, like licking sugar cane juice off sandpaper, plus petrolic cough sweets, black pepper and tarragon – are you up for it? You could dowse the fyah with some water. The aroma now turned to exotic fruits including mango, papaya, kiwi and physalis. On the palate, however, there was still plenty of heat like ‘‘chipotles in adobo’’ – a smoky, tangy paste made with chipotle chillies and tomato purée.
