木で燻したハドック小屋、トラファルガー海戦後の船のデッキ、流木のビーチの焚き火でホタテの炙りとマリーローズ、レモンを連想させる。口に含むと、ロブスターにかけたレモン汁と醤油、焼いたトーストにかけたライムマーマレード、焦がしたオーク、灰、絆創膏が感じられる。加水すると、砂糖漬けのフルーツ、ピーナッツブリトル、シーフードが混ざった海岸(岩場、海藻)のそばのキャンプファイヤー(木の煙、灰)のような香り。加水した味わいは、蜂蜜と米酢で和えたカニ肉、バニラアイス、ポップコーンと続き、口の中を刺激し、唇を刺激する感覚になる。
The nose evoked wood-smoked haddock sheds, ship decks after Trafalgar or a driftwood beach bonfire serving seared scallops with marie rose and lemon. The palate found lemon juice and soy sauce drizzled on lobster, lime marmalade on burnt toast, charred oak, ash and sticking plasters. The reduced nose was another campfire (wood smoke, ash) by the shore (rock pools, seaweed) with a mix of candied fruits, peanut brittle and seafood. The palate became a mouth-puckering, lip-smacking sensation of crab meat dressed in honey and rice wine vinegar, followed by vanilla ice cream and popcorn; the finish – wood, ginger, peat ash and citric smoke.
