11年間 an ex-bourbon hogsheadで熟成した後、refill Spanish oak Sherry hogsheadへ移し替え。

Imagine a clear, warm day on Islay, on the beach the sun was about to set as we were pan-frying scallops with lime and coriander. On the palate neat we realised that we also had sprinkled a liberal amount of chilli on them releasing searingly hot sweet smoke, plenty of oomph but we all agreed an experience not to be missed. After reduction more oily and maritime reminding us of a smoked Thai samphire and crab meat salad on the nose while the taste, herbal and ashy felt more like a smoky aftershock with red hot cinnamon. Following eleven years in an ex-bourbon hogshead, we transferred this whisky into a refill Spanish oak Sherry hogshead.
