［香り］煮込んだ洋ナシとゴールデンシロップを添えたリンゴの煮込み、塩キャラメルとメープルキャンディー、ワックスジャケット、昔ながらの木製の筆箱と満足感のある香り。
［味わい］シロップ漬けの洋ナシとアプリコットの缶詰、砂糖コーティングしたショウガとリコリス オールソート、ワックスをかけたカンバス、ほのかなタバコのニュアンス。加水すると、トーストしたココナッツ、蜂蜜をまぶしたデーツ、ミントマッチメーカーの香りが広がり、味はバターを塗ったクランペットとハチミツをまぶしたマフィン、ピンクのウエハース、トーストにのせたゴールデンシロップが口いっぱいに広がり、ママレードの心地よい後味と、スパイス、ユーカリと噛んだ鉛筆の端、トースティーで温かみがある心地よい一杯。
The nose was a rewarding combination of poached pears and stewed apples with golden syrup, salted caramel and maple candies, waxed jackets and old style wooden pencil boxes. The palate gave us tinned pears and apricots in syrup, crystallised ginger and Liquorice Allsorts, waxed canvas and hints of tobacco. In reduction, the nose delivered toasted coconut, honeyed dates and mint matchmakers, while the palate was a mouth-coating triumph of buttered crumpets and honey-drizzled muffins, pink wafers and golden syrup on toast, with a teasing finish of marmalade, mulling spices, eucalyptus and chewed pencil ends – toasty and warming; hygge in a glass.
