タイトル： Firecracker stir fry sauce / 甘辛アジアン炒めソース
とても芳香で甘く香ばしいスモークの香りが迎える。キャンドルとお香のある教会の礼拝、焦がしたスペアリブのある庭でのバーベキューなどがイメージに浮かぶ。まるで甘辛アジアン炒めソースような唐辛子とスモーキーさの強烈なインパクト。加水すると、スモークサイダービネガー、ローストしたカボチャ、ビーツ、ホースラディッシュの香り。加水した味わいも相変わらずの刺激的な同様の味わいだが、今は煮詰まったスパイシーなボーン・スープとハバネロ・ペッパーの野菜天ぷらレタス・ラップを食べたような感じだ。
On the neat nose a very aromatic, sweet and fragrant smoke greeted the panel. Some were transported to a church service with candles and incense, others to a garden barbeque with charred glazed spareribs. The taste neat was not for the fainthearted – a massive chilli and smoky hit like from a firecracker stir fry sauce. Following the addition of water, the aroma was that of smoked cider vinegar, roasted squash, beetroot and horseradish. On the palate, still the firecracker, but now like a spoonful of simmering, spicy bone broth and a habanero pepper vegetable tempura lettuce wrap.
