TITLE: Trawlers, tractors and tremendous smoke / トロール船、トラクター、とてつもない煙
［香り］岩場に漂う潮風と新鮮なラングスティーヌの箱を連想させ、期待に満ちたごちそうには、マリーローズソース、熱々のスモークサーモンのバルサミコ、そしてヒリヒリする白ワインが続く。ピートスモークの波が口中に押し寄せ、燻したヘザー、甘いココナッツ、消毒用クリーム、カーボリック、ムスキーなアフターシェーブが添えられる。ノーズは海辺の上空を漂い、トロール船やトラクター、巻き網、ハーブの煙など、農園を見渡すことができる。
［味わい］口に含むと、ライムジュースとグースベリーの酸味に加え、灰、ふやけた赤唐辛子、スモーキーなアンチョチリ、ヒース、スレート、リコリスが感じられ、重厚なドラマに仕上がっている。
The nose evoked sea breezes wafting over rock pools and a box of fresh langoustines – the anticipated feast also had Marie Rose sauce, balsamic on hot-smoked salmon and flinty white wine to follow. Rolling waves of peat smoke crashed over our palates, accompanied by smouldering heather, sweet coconut, antiseptic cream, carbolic and musky aftershave. The reduced nose droned above the seashore and spied a farmyard – from trawlers to tractors, from creels to herbal smoke. The palate now found tart notes of lime juice and gooseberry as well as ash, blistered red peppers, smoky ancho chillies, heather, slate and liquorice – a massive dram.
